i recently had the same undertaking. i stripped the tank down to the metal, just because the paint job previous was awful.but my only advice would be if you do decide to strip down have really good gloves, the stripping agent i used was burning through gloves, but the rattle can job came out incredibly clean. oh and you can get clear coat that is gas resistant.

for ice cream there is always the option of dibbs, they're ice cream in little bite sized bits and if you have a messanger style bag it would make it really easy to eat them, yes i realize that it takes away from part of the joy of ice cream, and i am unsure as to how fast they melt, but if your really want some ice cream while you ride that's a less messy, and a much safer method check
