TLDR: I don’t understand electrical very well

There is only one wire coming out of the cdi to power my accessories as opposed to a bunch on the stock points units I am more familiar with. To send power to everything (minus the horn I deleted) do I daisy chain the power line through the terminal or is there a better way.

im no expert on electrickery but I'd just use one wire to take the power to somewhere hidden where all your electric bits live. headlamp? near to your switches? cant you just use the bikes present wiring?
You want all of your electrical loads to be in parallel. Daisy chaining the hot wire from the powerdynamo unit on one side of the screw terminal block, and connecting each load on the other side, will work fine.
^^^ Brian's advice is what you need.
The Powerdynamo you bought has VDC output, so you'll want everything in parallel and everything with a good solid ground.
You should strip your harness of anything unneeded in the least, but I always suggest building a harness if you're going to be upgrading your system in this manner

Series vs parallel circuits:
Your switches, except for the kill switch, do not need ground (I'd use SPST switches). Make sure that your brake light switches are the right type (normally closed, which means they'll be open when the brake levers are at rest).

This is the wiring instructions. They look to fit what little I know about parallel circuits but there is only the one wire coming out of the cdi so I don’t understand the positive/negative bit… I thought I would have to ground one on the switch

All voltage is relative. The powerdynamo unit uses the brown wire (frame "ground") as its reference.
You do not necessarily need a ground in your switch, depending on how you wire it up. The most common approach is to use the switch as a simple open or closed circuit (no ground required), and to use that to control the hot wire to the relevant light. It doesn't look like the switches you bought will allow for that, but it's hard to tell given the lack of information. You could use these, but it would make your wiring more complicated.

Ok thanks for the info Brian. If you would be so kind as to explain how to wire the switches I would appreciate it.
It depends on how the switches you bought actually work; I did some google searching and couldn't find anything conclusive.
They may switch 12V to "the function" wire when the button is pressed. They may switch ground to "the function" wire when the button is pressed. Without better documentation your only way to know for sure is to buzz it out with a multimeter or test it with a simple circuit.
If the switch connects 12V to "the function" wire when the button is pressed, connect "the function" wire to your light and ground the other terminal of your light.
If the switch connects ground to "the function" wire when the button is pressed, connect one terminal of your light to the lighting circuit, and the other terminal of your light to "the function" wire.
