I'm going to go with dustin. Yes, you seem like a mechanically smart guy, but tuning an engine correctly is a different kind of knowledge than machining (not saying you wouldn't be able to figure it out quickly). Learning how to jet, plug chops, feeling when its lean, timing, all of that can be done on a cheaper kit that you might blow up, but it'll still probably run like a champ after.

You'll still hit about 55 if you do it right. later, when you feel comfortable, I'd say go with polini or gila.
