They allow you to hold the variator in a closed position so that you can stay in lower gearing longer. A properly tuned variator will be tuned so that "shift" occurs at higher revs once you are in your pipes powerband. The main reason to have a launch lever is to have a daily driver and a racer in one. You would have a less agressive variator tuning but have the launch lever for when you want to race off the line once in a while.
