The consensus around the forum lately has been that the 65cc Metrakit is the best kit for beginners.
I have no personal experience with the MK; i've used an Airsal 70cc on a Puch in the past but I've moved away from kitting at this point.
I think 65cc Metra + 15 Bing + Biturbo would probably be a nice, simple combo for you. I recommend Treats HQ on eBay for the kit.
Hydraulic forks sound cool.
