Basically the title. Have gone through 3 head gaskets on the qt50, all blowing in the same place. Would a piece of granite or glass be enough to get it flat, or would I have to go use a mill?

use anything flat, but the problem is most likely advanced timing or fuel lean or air leak, causing it to run hot hot blasting out your head gasket.
Yeah bike was running lean when I got it. Carb wasn’t sealed and it got hot enough to blow the head gasket. Kept running it and didn’t realize it was blown, so it warped

Originally the stock metal one, then high temp cork, then a paper gasket material
Sometimes it could be a bad cylinder stud that just didn't give all the way yet bad threads
Oh man, I've been here. Glass works well; add some soap or cutting oil to the mix and take it to at least 1500 grit. Also, I'm a big fan of copper gasket spray.
I'm lucky that in a past life, I thought myself an amateur machinist....got a 2x3 surface plate for a song...have used it plenty for this...

Sometimes it could be a bad cylinder stud that just didn't give all the way yet bad threads when it gets hot the engine case hole expands and it lets the cylinder head Warp due to the uneven pressure under Heat and load
