This keeps on happening. after riding my lovely moped for a day the nut that holds the clutch good and tightly compressed completely strips out. i mean I can just pull the thing off. Does anyone know what larger issue could be causing this.

Sounds like the nut or the crankshaft threads are stripped. Hopefully its the nut, can you tell from looking are any threads worn or missing?

The threads on the nut get completely ground out. I have ordered replacement nuts from moped junkyard. after a day of riding they are stripped out again
is there blue paint under that silver?
The threads on the crankshaft could be buttered up.
the circlips that hold the clutch on are prolly messed up or not holding where they should. this will cause the clutch to move and strip the nut. i have seen this happen. next time you are in there make sure that the clutch isnt able to slide back and forth on the crank.
