for ice cream there is always the option of dibbs, they're ice cream in little bite sized bits and if you have a messanger style bag it would make it really easy to eat them, yes i realize that it takes away from part of the joy of ice cream, and i am unsure as to how fast they melt, but if your really want some ice cream while you ride that's a less messy, and a much safer method check out dibbs.
