As someone who races his moby in MiniGP, Bidalot parts are worst than heroin, except more rare and fragile. Eventually you'll stop caring about the damage you do to your bike after one race season... maybe...
On topic though, moby's are probably the bikes with the most performance targeted aftermarket. They are still raced in France and modified all over the world (mainly the Brazilian, French, and Norwegian domestics). This means parts are still manufactured but the fire is slowly dying.
Doppler & Giannelli are probably the only exhausts you can get easily (not that they are bad, they just aren't amazing like Ninja or Bidalot). Polini has discontinued their aircooled 50cc cylinder line and I'm sure the rest of the parts will slowly follow suit (or maybe they are just releasing something new but I have doubts). But, going farther than your average parts means you're probably going to be racing your moby and I don't see that happening (don't let that stop you though).
At the end of the day, nearly all running mobys are smooth-riding as hell and will pull off the line faster than any other bike.
