Since it seems a lot easier to drill a jet out than to pay $6.95 and wait for it to be shipped if you don't have a local store, I am posting this chart that relates bit sizes to jets for both the Dellorto and the Bing.

Also, from scooterforum.net, it's reported that Dell'orto jets go up 5 for every 1 gauge down (approximately), and a 50 jet is 75 gauge, so jet 55 - gauge 74, jet 60 - gauge 73, etc. This is unverified, but it's not too far off from the information in the chart below. *UPDATE* I bought the 80-61 drill set and verified some of the values: I had a 56, 66, and 70 which I measured and put into the chart. The scooterforum info is approximately correct.
