So easy a monkey could do it?

Wohoo! I now have, in my possession, a torque wrench! I never thought I’d be so happy to see a tool…
It is my plan to replace the head gasket (Puch Kromag) because I’m convinced (or maybe paranoid is a better word) that it’s leaking air and/or a bit of black oily stuff. Anyhow, I’ve never removed the head and I’ve never watched anyone remove one, so I thought I’d get some advice or directions before I start taking stuff apart.
So, do I:
1) Take spark plug out
2) Remove four nuts
3) Pull head off
4) Pull old gasket off
5) Clean stuff (I’m probably not going to be able to stop myself on that one, so if it’s a bad idea, tell me!)
6) Put new gasket on
7) Put head back on
8) Torque head to specifications (Maxi manual says 7 ft/lbs)
9) Replace spark plug
1-9) Improvise accordingly because nothing ever goes the way it’s supposed to
??
I’m just not sure if this is a category A repair (really easy but I make a big deal out of doing it) or a category B repair (I jump right in and realize later that I SHOULD have asked for directions).
So, is replacing the head gasket so easy a monkey could do it? Are there any pitfalls or ways to FUBAR stuff that I ought to know about? Keep in mind that my rate of actually fixing things the first time I touch them hovers somewhere around 15%. If there’s a way to mess this up, I will find it.
