Plug Chop - Turn bike off instantly?

So I have been trying to do a few plug chop’s on my 07 tomos sprint, but I think i am doing something wrong.

After reading tons of posts about plug chops, my understanding is to go full speed on flat ground for about a half a mile or so, turn the bike off right away, and pull the plug out.

The problem with my sprint is when i flick the power button to the off position, the bike does not stop running until i stop moving, so does that ruin the validity of the plug chop? Because my understanding is to go from full throttle to off, so you can get the true results, rather than mudding them up by slowing down.
